The Gallatin Chef's Knife
The Gallatin was born through our desire to create an attainable Chef's knife, with all the premium features of a custom knife. For this Chef's knife, we chose M390 stainless steel hardened to 62 Rockwell. With a full flat grind, a distally tapered blade, and a rounded spine and heel, this knife is designed with a focus on comfort, performance, and luxury.
This blade's shape and lines are stylized with a unique blend of Japanese and Western influence, taking the best of both worlds and combining them into a custom tool.
From the start of this project, we've succeeded in using industry leaders every step of the way. Taking our passion and knowledge in combination with these professionals, we're confident we've come up with your new favorite tool in the kitchen. We hand-inspect each knife and reject any that don't meet our high standards.
From start to finish, this knife is made entirely in the USA.
With a 2 inch tall heel, distally tapered blade, and over 8 inches of cutting edge, this knife showcases the flexibility and ergonomics previously only found in custom blades. This blade has a recurved heel that stops the rocking back motion of the knife so the handle doesn't rock back to contact the cutting board.
Hardened to 62 Rockwell
These knives are precisely hardened to a high Rockwell, to maximize edge retention and sharpness, while simultaneously retaining flexibility and durability.
M390 Swedish Stainless Steel
M390 Stainless is a steel commonly used in pocket knives, but due to its availability, rarely in kitchen wares. We've sacrificed production scaling for top of the line quality to ensure our knives are made out of an incredible steel.
